CP. Reserva Cabernet Sauvignon
Varietal Composition: 100% Cabernet Sauvignon.
Geographic Area: San Clemente, Maule Valley.
Winemaking: The grapes, of our own production, were carefully selected, hand-harvested and cold macerated for eight days. The must was then subjected to fermentation with selected yeasts in stainless steel tanks at 27°C. 40% of this wine was then aged for six months in French and American oak barrels.
Winemaker’s Comments: This Reserva wine is red with violet notes. Its earthy bouquet is complemented by fresh fruit, black cherries, spices and tobacco. On the palate, the wine is smooth and fresh with prunes and black pepper and robust, silky tannins.
Food Pairings: This wine combines well with red meat with spicy sauce, casseroles and strong cheese. Best served at between 16ºC and 18ºC.
Cellaring Recommendations: Three to four years.
