CP. Gran Reserva Carmenere
Varietal Composition: 100% Carménère.
Geographic Area: San Clemente, Maule Valley.
Winemaking: The grapes, of our own production, were selected and manually harvested, then subjected to a cold maceration for twelve days. This was followed by fermentation with selected yeasts in stainless steel tanks at 27ºC. The wine was then subject to malolactic fermentation in French oak barrels where the wine was aged for twelve months.
Winemaker’s comments: This Gran reserve is an intense purple-red color. On the bouquet, black plums, tobacco and soft spicy aromas combine with smoky notes. The wine has a velvety palate with Sweetness of silky tannins, black pepper and tobacco as well as dominate notes of ripe black cherries and smooth hints of toast, which make for a fresh, persistent finish.
Food Pairings: This wine is ideal with seasoned pasta, pork, paté, white meat with creamy sauce and smoked cheese. Best served at between 16ºC – 18ºC.
Cellaring Recommendations: Five to six years
