CP. Reserva Sauvignon Blanc
Varietal Composition: 100% Sauvignon Blanc.
Geographic Area: San Clemente, Maule Valley.
Winemaking: Grapes were selected from our own vineyards and hand-harvested in the early morning to preserve the aromas. Prior to fermentation, maceration took place in the press for tour hours. This was followed by fermentation with selected yeasts in stainless steel tanks at temperatures of between 12°C and 15°C.
Winemaker’s Comments: This is a pale, straw-colored wine with intense aromas unveiling notes of pineapple, grapefruit and white peaches. It is fresh on the palate with citrus notes, green apples and noticeable minerality.
Food Pairings: This wine is excellent with fresh seafood, lean fish, smoked salmon, salad and fresh fruit. Best served chilled at between 10°C and 12°C.
Cellaring Recommendations: Three to four years.
