Varietal Composition : 100% Sauvignon Blanc

Geographic Area: Peumo, Colchagua Valley

Winemaking: A wine where tropical notes predominate, combined with the freshness of our grapes grown on the banks of the Cachapoal River. On the nose it is fruity, fresh and clean with notes of grapefruit, currants, green apples, tomato leaves and pepper. Floral aromas.
On the palate it is a refreshing dry white with balanced freshness and citrus notes that suggest ripe tropical fruits.

Winemaker’s comments: These specially selected grapes are harvested by machine by
overnight, while they are still cold, to preserve the flavors of
Fresh fruits. The must is macerated at 10°C for 5-8 hours to
enhance varietal aromas. The alcoholic fermentation is controlled
carefully at temperature at 14°C, to achieve clean flavors,
fresh and fruity.

Food pairings: This wine pairs very well with salmon and chicken rolls, seafood,
lobster and scallops. It is ideal with vegetables, grilled tomatoes and Caesar salad. Perfect with Thai food and Asian soups. For dessert, pair with fresh fruit salad and a strawberry bavarois

Cellaring Recommendations: Five to six years.
