Winemaking:The grapes were carefully selected and harvested by hand. Cold maceration took place over seven days at 5ºC.Alcoholic fermentation with selected yeasts took place in stainless steel tanks at 27ºC.This was followed by malolactic fermentation in French barrels. The total ageing process in oak barrels lasted twelve months.
Winemaker’s comments:A Cabernet Sauvignon of an intense , attractive ruby-red color. This wine has complex aromas with fresh, Sweetness of notes in which dried black fruits combine with the fine toasted notes resulting from the ageing process. The palate is smooth and the ripe tannins fill the mouth. Black pepper, prunes adn soft vanilla create a long and persistent finish.
Food Pairings:This wine can be enjoyed with all types of meat, especially with well-seasoned barbecued red meat. It also pairs well with strong, creamy cheese.
