Tasting notes:
Varietal Composition : 100% Carmenere
Geographic Area: San Clemente, Maule Valley
Winemaking: The grapes, of our own production, were selected and harvested by hand. Prior to fermentation, a cold maceration took place over eight days. This was followed by fermentation with selected yeasts in stainless steel tanks at 27ºC. 40% of this wine was then aged for six months in French and American oak barrels.
Winemaker’s comments: This wine is a deep purple-red color and has aromas of fresh black fruit, cherries, black pepper and chocolate. On the palate, it is well-structured with very smooth tannins. This is a fresh wine with notes of black plums, tobacco and a smooth toasted undertone that combines with the fruit on the finish.
Food pairings: This wine pairs well with pasta, white meta, mature cheese and Chinese food. Best served at between 61°F and 64°F.
